Recipe: Greens, Beans & Pasta Bowl of Comfort

Greens, Beans & Pasta Bowl of Comfort

2 cups cooked greens
1 can chickpeas, drained
1 cup small whole wheat pasta, like ditali
1-2 tablespoon olive oil
Parmesan or pecorino romano cheese

Cook pasta in a pot of boiling, salted water until al dente. Just before draining, add chickpeas and greens to pot with pasta to warm through. Place colander in a larger bowl to drain pasta, reserving pasta water. Return pasta, beans and greens to pot and drizzle with olive oil.

To serve, portion into bowls, ladle over desired amount of reserved pasta water, and sprinkle with cheese.
