Advent Roasted Root Vegetables (Advent Reflection 2)

The Second Sunday of Advent 


Isaiah 11:1-10(NRSV)
11:1 A shoot shall come out from the stump of Jesse, and a branch shall grow out of his roots.

11:2 The spirit of the LORD shall rest on him, the spirit of wisdom and understanding, the spirit of counsel and might, the spirit of knowledge and the fear of the LORD.

Advent Roasted Root Vegetables


Preparation time: 15 minutes
Cooking Time:   20-30 Minutes

Ingredients:


1 Large Carrot, cut into 1inch pieces
1 Yellow or Red Onion, cut into 1 inch pieces
1 Large Potato, cut into 1 inch pieces
1 Parsnip, cut into 1 inch pieces
1 Beet, cut into 1 inch pieces
Diced bunch of parsley (Optional)
Salt and Pepper
Olive Oil 

Instructions:

1. Preheat Oven to 400 degrees.
2. Place diced vegetables onto a roasting pan. Sprinkle the vegetables with salt and pepper, drizzle olive oil over the vegetables. 
3. Roast the vegetables for 20-30  minutes until  browned between gold and chestnut . 
4. Serve hot and sprinkle with diced parsley if you desire. 

Serves 2-4
